What do I have in common with minions? We both love bananas!

And here are a few reasons why you should too:

1. Bananas help overcome depression due to high levels of tryptophan, which is converted into serotonin — the happy-mood brain neurotransmitter.
2. They help sustain your blood sugar, perfect to eat before an intense workout.
3. And because bananas helps you to regulate your blood sugar, they are perfect to help improve your mood and reduce PMS.
4. Bananas are high in potassium and low in salt, so according to the FDA they can help your body to lower your blood pressure and protect against heart attack and stroke.
5. As a good source of vitamin C, bananas can help combat the formation of free radicals known to cause cancer.

Plus, bananas are super yummy (I know I’m not the only one who thinks so!), very fulfilling to the stomach and easy to eat and carry around (making them the number one on-the-go snack).

I have two versions here — gluten-free and paleo-friendly.

Gluten-free Banana Pancakes

What You’ll Need:

1 cup mixed nuts — processed (I love it with cashews, almonds and walnuts, blended)
2 bananas (mashed)
2 eggs
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 tablespoon coconut oil or ghee
Optional toppings: banana slices, honey, nuts, maple or agave syrup.

What You’ll Need To Do:

1. In a bowl, whisk together all the wet ingredients (bananas included).
2. Add dry ingredients and mix until combined.
3. Place a large non-stick pan over a medium-high flame until surface is hot. Add the coconut oil/ghee.
4. Add desired amount of mix to pan. Flip once bubbles have formed.
5. Add your favorite toppings and voilá, you are done!

Paleo-friendly Protein Banana Pancakes

This is another easy recipe and instead of using nuts, we are going to use oats instead.

There are many health benefits of oats including:

1. Lowers cholesterol
2. Enhance immune response to infection
3. Stabilize blood sugar
4. Good source of fiber
5. Reduce risk of cardiovascular disease

What You’ll Need:

1 cup oats
2 bananas mashed
2 eggs
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 tablespoon coconut oil or ghee
Optional toppings: banana slices, honey, nuts, maple or agave syrup.

What You’ll Need To Do:

1. In a bowl, whisk together all the wet ingredients.
2. Add dry ingredients and mix until combined. If needed, you can add two tablespoons of milk.
3. Place a large non-stick pan over a medium-high flame until surface is hot. Add the coconut oil/ghee.
4. Add desired amount of mix to pan. Flip once bubbles have formed.
5. Add your favorite toppings and voilá, you are done!
